La receta de esta semana es una de esas que lo tiene todo, es muy fácil, requiere poco tiempo y sobre todo, deliciosa. Además no es de esos dulces que empachan y dan un poco de reparo. Al contrario, después de comer una de estas tartaletas es muy probable que apetezca una segunda...aunque eso ya entra en el terreno de la gula.
Aunque las peras no solían llamarme mucho la atención, desde hace poco tiempo he empezado a apreciarlas, sobre todo cuando están bien maduras y dulces, así que cuando vi esta receta de Donna Hay no me pude resistir.
Supongo que solamente con verlas ya os podéis imaginar el hojaldre crujiente, la dulce crema de almendra y el frescor de la pera, todo con un sabor muy suave de sirope de arce. Es importante que el hojaldre quede bien tostadito, así que no tengáis prisa en sacarlas del horno hasta que no tengan un color bastante tostado. ¡Ya veréis como merece la pena!
Precalentar el horno a 200º
Batir en un cuenco la mantequilla a temperatura ambiente con el azúcar y el extracto de vainilla hasta tener una crema. Añadir la yema, la almendra y la harina. mezclar bien. Quedará una pasta bastante espesa.
Pelar las peras, partirlas por la mitad a lo largo, quitarles el corazón y cortar cada mitad en láminas lo más finas posible usando una mandolina o un cuchillo bien afilado.
Poner las dos laminas de hojaldre una sobre la otra y pasar el rodillo para estirarlas ligeramente.
Cortar círculos con un cortapastas de unos 10 cm. y marcar un círculo en el interior de cada disco con un cortapastas algo más pequeño.
Repartir la pasta de almendra sobre los discos de hojaldre sin cubrir la zona del borde.
Cubrir la pasta de almendra con las láminas de pera y pintarlas con sirope de arce con ayuda de una brocha.
Hornear durante unos 15 minutos, volver a pintarlos con sirope de arce y dejarlos en el horno otros 10 minutos, hasta que estén bien tostadas.
Servir templadas o a temperatura ambiente.

Ya sabes cómo me gusta una tarta de frutas, así que estas tartaletas no iban a ser menos, me entusiasman!!! Te han quedado preciosas y es verdad, son sencillas de preparar y super apetecibles. A mi gusta mucho cocinar con peras, tanto en dulce como en salado. La mezcla peras-queso azul o como en este caso, la mezcla pera-almendras, me parecen perfectas.
